Bohemian Ovens is an authentic brick oven bakery owned and operated by Mike and Sally Hable. Since opening on July 28, 1997, they have dedicated themselves to baking the finest “European Style” Hard Crusted Breads, super premium pastries, and fresh fruit desserts.
Born to Bake: Our Story
Mike Hable has always had a love for baking. When Mike was 9 or 10, he used to make caramel rolls everyday for the milkman. Even during his 27 years of farming, he always knew he wanted to bake, so he promised himself that when he turned 50, he was going to do it. Looking back, Mike sometimes describes himself as “a dumb farmer that jumped from the frying pan into the fire.”

When the day finally came, Mike needed a place to start his operations. The building had been a daycare, a church, and now it was going to be a bakery. When Mike opened in 1997, Bohemian Ovens was exclusively a bakery making artisan breads. Everyone told him he was crazy and his business would fail because artisan bread was still in its early development. He refused to accept this, so he continued to work and pushed even harder to make his business a success. The building is still up and running today, and sometimes it still seems like a daycare… except for old men.

We Knead It Daily
Our hand-built brick oven is the “heart and soul of our baking operation,” and its unique design was created by Mike’s brother Bill, while Mike hand-placed all 2128 bricks. A heating and ventilating engineer, Bill designed a more advanced oven with a cantilever top, rather than a conventional arch. The oven has a unique damper system allowing baking without having to put out the fire. That is not possible with other brick ovens. The oven weighs 15,000 lbs and and can bake up to 40 loaves of bread at a time. We go through anywhere from 10-35 bags of flour a week, making our hard-crusted breads, pizza crusts, rolls, pastries, doughnuts, and breakfast kolaches. Bohemian Ovens focuses on flavorful food that is fresh and made from only the best quality ingredients. Most restaurants are out of the freezer and into the deep fryer, while we focus on delivering unique foods that can’t be found anywhere else. It’s our job to bring the people of Bloomer and surrounding areas authentic Czech cuisine because many of them share our heritage. We serve from scratch and work hard to bring our customers food of distinction. Mike describes our food best as “gourmet served on a paper plate.”

We make 10 made-from-scratch soups a week from classic Chicken Noodle and Chili to Nettle and Creamy Dill Pickle. We never serve the same soup twice in one week!
